Swedish Meatballs
- 1 cup finely minced onion softened in oil or butter
- 1/2 cup stale bread softened in 1/2 cup milk
- 1 egg
- 1-1/2 lbs ground beef (15% or more fat)
- 1-1/2 tsp ground nutmeg
- 1 tsp salt
- 1/2 tsp white pepper
- 3/4 cup white flour
- 1/4 cup vegetable oil (grapeseed preferrably)
- 6 oz (1 container) Stock Options Veal (or Beef) Demi-Glacé
- 1 cup heavy cream
Mix onions, bread, spices and meat thoroughly. Roll into 3/4 to 1-inch balls and coat lightly with flour. Saute very gently in oil, being careful not to burn or toughen. Add Stock Options Veal (or Beef) Demi-Glacé and cook until it begins to form a gravy. Add cream and stir till blended. Taste for salt and pepper. Serve with boiled potatoes or poppyseed noodles.
