Swedish Meatballs

  • 1 cup finely minced onion softened in oil or butter
  • 1/2 cup stale bread softened in 1/2 cup milk
  • 1 egg
  • 1-1/2 lbs ground beef (15% or more fat)
  • 1-1/2 tsp ground nutmeg
  • 1 tsp salt
  • 1/2 tsp white pepper
  • 3/4 cup white flour
  • 1/4 cup vegetable oil (grapeseed preferrably)
  • 6 oz (1 container) Stock Options Veal (or Beef) Demi-Glacé
  • 1 cup heavy cream

Mix onions, bread, spices and meat thoroughly. Roll into 3/4 to 1-inch balls and coat lightly with flour. Saute very gently in oil, being careful not to burn or toughen. Add Stock Options Veal (or Beef) Demi-Glacé and cook until it begins to form a gravy. Add cream and stir till blended. Taste for salt and pepper. Serve with boiled potatoes or poppyseed noodles.
